Memere’s Dark Brownies

My dad once told us how he used to think he had it bad, because they never got any store bought snacks.  They would have homemade cakes and deserts, Memere never made anything from a box. These homemade brownies are dark and sweet.

8×8 pan:

  • 2/3 c flour
  • 1/2 t salt
  • 1 C sugar
  • 1 T vanilla
  • 1/2 T baking powder
  • 6t Cocoa powder
  • 2 eggs
  • 1/2 c veg oil
  • 1/2 c chopped nuts
  • Sift flour and measure (Although my Memere says she doesn’t). Add baking powder, salt, and cocoa. Add sugar to eggs, beat thoroughly. Add oil and blend. Add dry mixture and mix well. Add vanilla and nuts. Pour into well greased 8×8 pan (Mem uses non stick spray). Bake at 350 for 30-35 mins.

Cherry Breeze

This is another family favorite. Very popular around the holidays, or birthdays. Memere would make this for nearly every family event, even went as far a sending me home with them a few times in college. It’s simple to make, and quite tasty. 

Makes 1 Pie:

  • 1 Graham cracker Crust (Maybe I’ll find a homemade recipe to link to later)
  • 1 package cream cheese
  • 1 14 oz can sweetned condensed milk
  • 1/3 c. Lemon Juice
  • 1t vanilla extract
  • 1 can (21oz)cherry pie filling
  • With mixer beat cream cheese until fluffy. Gradually beat in milk until smooth. Stir in lemon juice.

    Pour into Crust, chill 4hrs or until set.

    Top with pie filling before serving.

Memere’s Light Muffins

Makes 12 muffins:

  • 2 C Flour
  • 1/2 C honey
  • 3 B baking Powder
  • 1 T salt
  • 3/4 C skim milk
  • 3t veg oil
  • 1 egg substitute
  • 1 t lemon juice
  • 1 c Fresh Blueberries
  • 1 t flour
  • Combine blueberries with 1T Flour to absorb moisture. Mix all ingredients together until well blended, but don’t over mix. Spoon Mix into 12 muffin cups. Bake at 400 for 18-23 minutes or until golden brown. If Desired Brush tops of warm muffins w/ O.J and dip in cinnamon sugar. (1T cinnamon & 1/4 C sugar)
